A baking sensation disguised as a cafe manager for too long emerges from Covid with scratch-made, intricately thought out, and prepared baked goods with exciting flavors no one could resist. It started at the farmers market outside the North Market on Saturday mornings and now Chef Allyson brings The Pastry Factory and its delicious unique gourmet desserts and pastries inside the North Market everyday! As options rotate regularly, some of decadent goodies at The Pastry Factory include: Gourmet Cookies, Brownies, Pastries, Dog Treats, Tarts, Cakes, Cupcakes, Pies, Eclairs, Creme Brulee and one of Allyson’s most intricate, but also memorable fun desserts, Fortune Cookies! She loves working with her clients to come up with flavor profiles to fit their needs and situation. You won’t find basic flavors here as this is an elevated experience for your palette, sure to impress. They welcome special orders for parties and events and look forward to finding that special flavor just for you!
How did the idea come about?
Chef Allyson’s love of baking started at a young age while watching her grandmother bake. Fast forward a bit and she is baking on the side and weekends working at local farmers markets and catering for local businesses all while managing a cafe at The Franklin Park Conservatory. Covid hits, everything gets shut down and Allyson goes all out and focuses all her time on her baked wonders. She applied for the farmers market at the North Market that summer and CRUSHED it! The success gained interest and The Pastry Factory was asked to become a merchant inside the North Market as of 2021. The rest is a story that Allyson is excited to write with each unique flavor she gets to create with you!
What’s Your Favorite Thing About Being a Part of The North Market?
With so many voices and vast diversity at the North Market, Chef Allyson feels like she belongs and is comfortable here. She loves playing around, trying new ideas and flavors while utilizing the wealth of knowledge the merchants at the North Market possess. She sees her space as her creative wonderland where she invents, tests, and prepares everything. She often comes in and just starts making up recipes and trying new ideas that come from so many places and encouraging ideas from anyone, including customers and fellow merchants.

Story of The Pastry Factory and Chef Allyson:
This baking sensation started flying through Easy Bake Oven recipes at the age of 10, so it’s no surprise by age 12, Chef Allyson was making intricate desserts. She would bring them to school and often even be invited into the Teachers Lounge where the teachers would buy items from her. Eventually she ended up in the food industry completing dual degrees in Culinary and Baking and becoming a cafe manager. The baking never stopped and she was killing it at local farmers markets on a weekly basis until Covid changed everything. The Pastry Factory joins and compliments its fellow merchants at the North Market and becomes an instant sensation. She was nominated by Columbus Best for “Best Desserts in Columbus” in 2025 and has become well known for the quality of not only her locally sourced ingredients, but the quality of her attention to detail and knowledge of the art of baking that you can feel and taste in every magical bite you’ll take.
