Hubert’s Polish Kitchen
About Hubert’s Polish:
Hubert’s Polish Kitchen is more than a food stall; it is a direct link to the kitchens of Poland. Specializing in traditional, scratch-made Polish cuisine, Hubert and his team serve up hearty portions of homestyle classics that are as authentic as they come.
The experience is fast-casual and welcoming, where the menu is a “greatest hits” of Polish comfort like Pierogi, Kielbasa, Cabbage Rolls, Bigosh (a slow cooked hunters stew), and fresh side options including beet salad and Mizeria (cucumber-cream dill salad). This allows Hubert’s to ensure every meal feels like a Sunday dinner in a Polish home.
How did the idea come about?
The journey of Hubert’s Polish Kitchen began in 2005 when Hubert Wilamowski emigrated from Poland to the United States. While he adjusted to his new life in Central Ohio, he realized there was something vital missing: the authentic tastes of his homeland.
A lifelong lover of cooking, Hubert saw an opportunity to fill that void. He noticed that while Columbus was a city of foodies, there were few places where one could find real, “non-fusion” Polish comfort food. Drawing on a passion for the kitchen that he had carried across the Atlantic, he decided to bring the flavors of his grandmother’s recipes to the people of Columbus.
What does being a part of the North Market mean to you and the business?
For Hubert, being a merchant at the North Market is about the “rock & roll” energy of a crowd that appreciates craftsmanship. As one of the market’s long-standing pillars, Hubert’s Polish Kitchen thrives on the personal interactions that only a public market can provide.
Being at the North Market means being part of an 149-year-old tradition of independence and authenticity. It allows Hubert to be a “culinary ambassador,” sharing Polish culture one plate at a time with locals, convention-goers, and tourists. For this business, the market is a community where the service is personal, the portions are generous, and every customer is treated like a guest in Hubert’s own home.
Story of Hubert’s Polish and Hubert:
The story of Hubert’s Polish Kitchen is deeply personal and rooted in a father’s love. While Hubert always possessed a talent for cooking, the decision to open the stall was driven by a profound motivation: the business was created as a tribute to honor his late daughter’s dream.
Every cabbage roll and pierogi is made with that legacy in mind. Hubert Wilamowski is a hands-on proprietor, often found behind the counter pan-frying pierogi or chatting with guests about the origins of his recipes. He remains dedicated to preserving the culinary traditions he brought from Poland in 2005, using the same family recipes that have been passed down through generations.
Today, Hubert’s Polish Kitchen stands as a testament to the power of food to heal, to remember, and to bring a community together over a shared love for a good, hearty meal.
