For over 25 years, Don and Carolyn Ziliak’s commitment to crafting exceptional Italian cuisine has made Pastaria and Pastaria Seconda beloved staples, deeply woven into the fabric of Columbus’s vibrant food scene. Every dish at Pastaria is made from scratch, and their sauces are all independently crafted, each a unique testament to their meticulous process. Pastaria Seconda caters to those who want to bring the flavors of Pastaria into their own kitchens. Sarefino’s Pizza offers mouthwatering New York style slices and whole pies that were voted “Best New York Style Pizza in Fall of 2024”. Don and Carolyn’s dedication ensures that every customer feels welcome and knows they’re getting the same great food every time they order which is the reason they have so many well known repeat customers.
How Did The Idea Come About?
The spark for their North Market empire ignited with bread. Don’s cousin owned a popular bakery in Chicago called Callabrese, and in the early 90s, the idea arose to bring this authentic bread to Columbus, a city then lacking in true artisan bakeries. He would personally make trips back and forth, transporting the fresh loaves. The original owner of Pastaria, then a small stand, was one of Don’s bread customers. When that owner decided to move on and owed Don for bread, he offered Pastaria in lieu of the debt. It was a humble beginning, but Don and Carolyn saw its potential. They officially took over in November of 1995. A few years later, recognizing the demand for fresh, ready-to-cook Italian ingredients, Pastaria Seconda was born. Beyond Pastaria and Pastaria Seconda, Don and Carolyn’s entrepreneurial spirit led them to acquire Sarefino’s Pizza.

They thrive on customer interactions, particularly the joy of seeing repeat customers and hearing stories about how people enjoy their food. Meeting the diverse array of people who walk through the Market’s doors daily is a constant source of inspiration. One memorable customer even declared he could “fill a water bottle with the Tomato Alfredo sauce and drink it!” Their dedication to their patrons is evident in their commitment to consistency.

Don’s journey into the culinary world isn’t one of formal training, but rather a testament to an innate talent nurtured by his mother. He’s the kind of person who can open a pantry and conjure up an amazing meal from seemingly disparate ingredients. A Notre Dame-educated engineer, Don’s analytical mind found its true calling in the art of cooking. During the Covid pandemic, Don and Carolyn innovated with pop-up drive-thrus around Columbus. They’d post on Facebook, set up a table, and offer cold, ready-to-prepare meals, ensuring their customers could still enjoy their food safely. Their story is a testament to passion, hard work, and the enduring power of delicious, homemade food.
