May’s Taste of the Month at North Market Bridge Park is the Sambusas from Hoyo’s Kitchen!
Somali sambusas are deep-fried pastries that are a staple snack and appetizer in Somali cuisine. Triangular in shape, similar to the South Asian samosa, and are thought to share the same ancient origins along trade routes. The outer shell is made from a thin, crispy dough that is folded into a triangle and sealed before frying. The most traditional filling is a spiced mixture of ground beef, chicken or veggie combined with onions, green chilis, and a blend of Somali spices including cumin, coriander, and cardamom.
